Caprino vaccino, also known as Robiolino, Formaggino or Formaggella, is a cheese that takes its name from the well-known cheese made from goat's milk but is actually obtained from whole pasteurized cow's milk, which was once left to acidify in buckets to obtain the curd. Today lactic ferments and rennet are added to the milk to obtain the curd, which is then broken up using a tool called a "ramino" and arranged in bundles that are tied, drained and poured into hoppers with the optional addition of water and potassium sorbate.
