Forty years later, Giovanni Monaci renewed the challenge made in the past and, with the help of his sons, moved to Almenno San Salvatore to revitalize a valley, the one born around the Imagna river, with enormous potential. The new technologically cutting-edge facility in the sector lent itself to an expansion of the range of products that now bear the name of Valle Imagna. Since November 2015, with the acquisition of the Caseificio Battipaglia in Brugherio (MB), the Monaci family has begun to bring to the table also stretched-curd cheeses, a specialty of Southern Italy. Active since 1957, the historic dairy, bases its business philosophy on the use of traditional milk processing techniques, specializing in particular in the production
