Caseificio Paleni has never stopped innovating, in fact over the years a series of improvements have been made to the facilities and cheese-making equipment and the collection area has been expanded, reaching milk collection from much of the Bergamo valleys. The daily collection, approximately 400 quintals, prompt delivery and immediate refrigeration entrust the facilities and the skilled hands of the cheese makers with raw material of great quality, raw material that is transformed into cheeses with unique characteristics. After molding and salting, underground storage rooms with controlled temperature and humidity ensure proper aging of the various types.
