The Monaci farm is located in Alta Valle Brembana, in Branzi: an area among the most unspoiled and best-preserved zones of the entire Bergamo region. Here the herd spends winter sheltered in the historic free-stall barn; in spring and summer, it is instead moved by transhumance to the alpine pasture "Mersa – Costa Sasso", located in the territory of the municipality of Carona (near Rifugio Calvi), where the pastures are rich in aromatic herbs. Milk is the true protagonist and the secret ingredient of this dairy's production: superior organoleptic characteristics are found, as well as unmistakable aromas, which make the produced cheeses of high quality.
